Summertime Tofu Sandwich (Vegan)

Makes 2 sandwiches

This simple tofu sandwich is packed with punch and goodness! Take it along on picnics, hiking or sitting on your deck for a surprisingly bold flavor in a healthy summer lunch. Dig in!


  • 1 package baked tofu (we prefer Trader Joe's brand)

  • 1 avocado

  • 1 cup arugula (rocket lettuce)

  • 2 brioche whole wheat hamburger buns

  • 4 tablespoons Pantala Mediterranean Fusion


  • Step 1:

    Slice tofu into 1/4 inch pieces

  • Step 2:

    Slice avocado

  • Step 3:

    Layer tofu, avocado and arugula onto bun

  • Step 4:

    Dollop a liberal amount of Pantala atop tofu

  • Step 5:

    Cover with top of bun and serve alongside your favorite pasta salad (topped with Pantala Dukkah Nut & Spice Blend in our photo!)
