Summertime Tofu Sandwich (Vegan)

This simple tofu sandwich is packed with punch and goodness! Take it along on picnics, hiking or sitting on your deck for a surprisingly bold flavor in a healthy summer lunch. Dig in!

1 package baked tofu (we prefer Trader Joe's brand)

1 avocado

1 cup arugula (rocket lettuce)

2 brioche whole wheat hamburger buns

4 tablespoons Pantala Mykonos Greek-Inspired Tapenade

2 teaspoons Pantala Cairo Egyptian-Inspired Dukkah Nut & Spice Blend (optional)
Instructions:
Step 1:
Slice tofu into 1/4 inch pieces
Step 2:
Slice avocado
Step 3:
Layer tofu, avocado and arugula onto bun
Step 4:
Dollop a liberal amount of Mykonos atop tofu and sprinkle with Pantala's Cairo (if desired)
Step 5:
Cover with top of bun and serve alongside your favorite pasta salad
