Simple Mediterranean Orzo

Serves 4 as a side dish

This dish travels well – bring it to your next potluck or picnic for an exceptionally flavorful pasta salad.

Ingredients

  • 4 cups water

  • 3/4 cup orzo (rice-shaped pasta)

  • 1 teaspoon kosher salt

  • 1 jar Pantala Mykonos Greek-Inspired Tapenade

  • 1 cup finely grated Parmesan cheese

  • 1/4 cup chopped fresh basil

  • 2 tablespoons extra virgin olive oil

  • 1/4 teaspoon red pepper flakes

  • Freshly ground black pepper to taste

Instructions:

  • Step 1:

    Bring the water to a boil in a medium saucepan over high heat. Stir in the orzo and salt. Boil gently for 10 minutes or until the orzo is just tender. Drain the water and return the orzo to the pan.

  • Step 2:

    Stir in the Pantala Mykonos, Parmesan, basil, olive oil and red pepper flakes. Taste and add pepper and/or more salt if desired. Serve hot or chilled.
