Avocado Toast

1 thick slice of your favorite bread

Butter (optional)

1/2 ripe avocado, sliced or mashed

1 hard boiled, poached or scrambled egg

2 tablespoons Pantala Santorini or Mykonos Greek-Inspired Tapenade

Freshly grated Parmesan or crumbled feta cheese (optional)

Salt and pepper
Instructions:
Step 1:
Toast the bread to your desired doneness. Spread a little butter on the toast if you like and then top with the avocado slices. Season the avocado with salt and pepper.
Step 2:
Arrange the egg on top of the avocado and season again with salt and pepper.
Step 3:
Spoon Pantala over the egg. Grate a little Parmesan or crumble some feta over your creation if desired. Enjoy!
